This course includes the study of concepts, processes, and theories of managing clinical nutrition services. The course will emphasize the delivery of high quality, cost-effective service that can be justified to hospital administrators, health care team members and patients. Prerequisite(s): Enrollment open to Nutrition and Food Management majors only.
